I wouldn't like it but I could see Katherine not seeking that out if she wakes up without her memory. She only turned in the first place because Rose presented the opportunity and then underestimated her. If she wakes up back in that state, she'd essentially be a sixteenth century teenage girl thrust into a twenty first century environment, and culture shock would undoubtably overwhelm her, not to mention blinding fear that Klaus will find her (she wouldn't know about the season 2 sacrifice yet and would expect him to still hunt her like he always does). The only true benefit to such a scenario would be that it could prevent what so many of us fear: her abuse at the hands of Damon, Klaus, Silas-as-Stefan, Stefan, and anyone else wanting in on the "fun" like Elena, Caro, Matt, Jeremy and ghostBonnie. I can see the recent former humans hesitate to harm Katerina Petrova, as she'd be a completely different person than Katherine Pierce.
If I were choosing the next course of action for Katherine, I'd have her wake up, memory intact, and hightail it to the nearest non-Salvatore allied house to formulate a plan. That would keep her safe from Damon, who will most definitely be eager to abuse her round the clock (and would likely want to rape her if it wouldn't make Elena mad-cause she'd view it as cheating rather than a crime given her typical reaction to sexual assault), and Klaus who will want to use her for hybrid making. Long term I wish Katherine would get revamped but by Silas, revealing she's as strong as he is, and is finally safe from Klaus. Then, she goes off into the sunset to find her own offscreen happiness and the Salvatores get left behind for good. They wouldn't know what to do if she permanently left them, cause their entire vampire lives have revolved around her in some capacity this whole time.
