I don't cook fish. I don't like it, I don't know how to handle it, I don't cook it. BUT, I'm not a freaking chef!
I like fish but don't cook it much as it is difficult to get good, fresh fish locally.
Having said that, however, guess how many times I would need to be told to cook the fish skin side down over high heat? Hint: fewer times than the contestant on this week's episode. Further, if challenged to make a piece of gorgeous, expensive salmon, it is unlikely that I would present a bastardized upscaled-but-not-really tuna casserole as my offering. Seriously? Fucking mac and cheese? I love a good mac and cheese. I'm not so stupid as to serve it with some $20/portion salmon, though. (I have, however, served it with some lovely tuna steaks...).
I guess this is why I'm not cooking on the tee vee for Gordon Ramsay. I don't have the sack to present things that are clearly wrong for several reasons and pretend that it's normal and okay and a thing that a good chef would do.
